A brassica a day...
Broccoli, cauliflower, cabbage, kale, collard greens, cavalier nero… what to all these have in common?
They’re all brassicas. Including a daily serving of brassicas in your diet will help with estrogen metabolism.. in particular with the ‘detoxification’ and excretion of oestrogen in the most effective way for your body (DM me if you would like a ‘geeky science-y convo on why!)
But with the best will in the world a side-order of broccoli will get a little boring after a while - not to mention the fact that a diversity of ingredients will be delivering a host of additional benefits via the diversity of phyto-and other nutrients.
So here are 10 ways (ok so I’ve added a bonus one too!) to get your daily serving of these lovely veggies...
Roasted broccoli florets/cauliflower/sprouts. Roasting brings out a whole new set of flavours;
Asian-style slaw - fabulous in a lunch-box but also a great side for dinner - especially good teamed with fishcakes;
Kale crisps - have you tried these crunchy flakes of deliciousness??
Frittata - a breakfast favourite for me and packed with veggies - use whatever’s leftover from dinner - broccoli, cauliflower, spinach and cabbage often feature in mine;
Cauliflower cheese - serious comfort food!
Cauliflower rice - you can pep it up by using it in place of couscous and addling lots of herbs/flavours
Steam cabbage/spinach/kale/greens and then toss in any one of a host of flavours… sizzling butter with garlic, chilli and ginger/ olive oil or butter with gently toasted fennel/caraway/cumin seeds (or a mix)... or your fav herbs/spices
Make a gratin - e.g. mushrooms and spinach
Soup - almost anything goes here and there’s the obvious broccoli and stilton - but how about lentils, bacon and chard (see @nslater)
Stir Fry - is there any better way of using up what veg is left in the fridge?
Use as salad leaves/greenery - good for spinach, kale (massage well with dressing to soften - or you can blanche first), leftover broccoli/cauliflower/anything really!
