Celeriac chips
I’ve been messing about in the kitchen, playing around with some substitutes, and if you're missing chips or sautéd potatoes, I think you'll like this lower carb substitute. Celeriac has about half the carb content of a potato.
All you need:
Celeriac
Herbs/seasoning of choice
Extra virgin olive oil
All you do:
Heat the over to hot (200C fan)
Peel and cut the celeriac into chips / cubes and boil/steam for 8 minutes
Drain and allow to steam for a couple of minutes
Spread out on baking parchment and place in the preheated hot oven for 5 minutes to dry out a little
Drizzle with extra virgin olive oil and your choice of seasonings.. I used oregano, and some soaked-oak salt I've just been given
Bake in the hot oven for 15-20 mins until golden, turning a couple of times during cooking
